Khao Man Gai is naturally pork-free — it is poached chicken over rice — which makes it one of the easiest Thai dishes for Muslim travelers to enjoy. At Something Space we keep it halal-friendly end to end: no alcohol, no pork-derived stock, no sugar.
What the dish actually is: Khao Man Gai is chicken poached at low temperature, served over rice that has been cooked in chicken stock, alongside a dipping sauce and a cup of hot broth. Every component is chicken, rice, and plants — there is no pork in the traditional dish to begin with, which is part of why it travels so well for Muslim diners.
The broth and stock are chicken-only: our broth and our cooking stock are made from chicken bones and chicken meat alone. There is no pork stock, no pork fat, and no pork-derived additive anywhere in the kitchen. The depth you taste comes from simmering chicken bones for hours, not from a shortcut.
Sauces without alcohol: our dipping sauce is balanced with fresh lime, fish sauce, fermented soybean paste, ginger, and chillies. There is no cooking wine, no mirin, and no alcohol-based ingredient. The brightness comes from acid, not from anything fermented into alcohol.
The science angle, and no sugar: we cut sugar entirely. What little sweetness you notice comes from starch in properly rested rice and from rendered chicken fat, while balance comes from acid and umami. Everything is measured and controlled with precise temperatures — the chicken is held between 75 and 80°C, and the rice is rested exactly ten minutes.
How it's served at the chef's table: at our open counter, the chef explains each element as he cooks it. You watch every step, and if you want to know what is in a dish, you ask him directly. If a bite isn't right, we cook it again at the table — no questions, no waste.
An honest note: we are halal-friendly, not formally halal-certified. We serve no pork and use no alcohol, but we have not passed a formal certification inspection. We tell you this plainly so that Muslim travelers can decide with full confidence in what they are eating.
